Pumpkin Millet and Currant Muffins

2 eggs
2 cups pumpkin pure
1 cups soy milk or regular milk
1/4?cup maple syrup
cup honey
cup canola oil
1/8 cup flax meal
1 teaspoon Cinnamon
teaspoon Ginger
teaspoon Vanilla
teaspoon sea salt
cup millet
cup oats
1 cup whole wheat flour
1 cup while flour
teaspoon baking soda
2 teaspoons baking powder
1 cup currants ( chocolate chips or carob chips are good too)
cup of walnuts

Preheat oven to 375 degrees F. Mix wet ingredients with an electric mixer. In another bowl, mix the dry ingredients and then add the dry ingredients to the wet ones. Spray muffin tins with cooking spray. Add the dough to the tins. Cook for approximately 25 minutes.
